Today's winning dish: Dominic's Homemade Meatballs and Tomato Sauce over Pasta.

 

Scottish rolls and egg vans.

 

Rolls (bread rolls by the way). It's disappointing that the bigger world doesn't know of these things. Its pretty impossible to find anything resembling a Scottish roll anywhere outside of Scotland. Take your baps and your burger buns and throw them in the bin right now. (well baps anyway, a scottish roll isnt particularly effective with a burger). The biggest supplier would be a bakery called Morton's. The side of their delivery vans used to be graced by a picture of a horse rolling over saying "A good roll does satisfy!". These rolls are pretty unbeatable when it comes to bacon, egg or a salad roll, essential when it comes to Lorne or potato scone.

The big choice to make with these rolls is well fired (burnt top, on the left), crispy/crusty (not pictured) or soft (on the right). I can't think of any other country that deliberately produces and buys burnt bread, but I can't think of any other country who deep frys pizzas or whose favourite wine is brown and full of pseudo-amphetamines either. Martin explains the crispy variety (paraphrased): Hard to explain because it has the crispy qaulity of a freshly baked baguette but lighter, thinner crust. The bread inside is very white. Better than any other bread food.

 

Egg vans.

You'll find them in industrial estates, near building sites and on the roads that students walk home along when drunk. England probably thinks of them as burger vans or snack bars or something unspecific - but in Scotland, at least, they are much more. They are the lynchpin of lunch to many. They'll do you a burger if thats what you want (maybe on a burger bun but maybe on a roll; see above) but various combinations of Lorne sausage, bacon, potato scones and eggs are their mainstay. All on a good Scottish roll. Often a good place to get a gammon/cheese/tuna salad too (as above).You usually want to avoid the chips, they'll likely be pre-cut and previously frozen, they're never going to come close to what a decent chip shop can do with the humble potato.

There's one nearby the studio. Jade's Express Cafe. Pretty much the best one any of us have ever been to - everything they do is amazing and the prices are lowww. They have an attention to detail that would send most Glasgow restauranteurs into coniption fits and their chips are well above average for a van too. On Fridays they have steak and pepper sauce as a special. £2. Beat that, egg vans of the world!
